Today, we’re presenting you a recipe whose main ingredient are sweet potatoes. They’re abundant in minerals, antioxidants and vitamins like: riboflavin, thiamin, vitamin B6, vitamin B5 and niacin. They also contain carotenoids which give them the orange pigment. Their amount of calories is lower than in white potatoes. They also contain a smaller amount of sodium and are free of fats. Still, they contain more sugar. They are full of anti-inflammatory properties. Sweet potatoes are even beneficial for people who have diabetes type II, because they don’t provoke the appearance of blood sugar spikes. Your amount of energy will be steady.
The recipe also uses coconut flour that is a lot healthier than ordinary flour. It helps you against high levels of cholesterol. Ginger is used against viruses, cancer, inflammation and bacteria. Turmeric is also abundant in various health benefits.

This is our recipe for muffins based on plants which are really delicious and at the same time they’re really healthy!
- ¾ of a cup of organic coconut milk
- 1 small sweet potato that you’ll roast (try to find an organic one)
- 1 cup of brown rice flour (organic)
- ¼ of a cup of organic coconut flour
- 2 tablespoons of olive oil (organic)
- 1 tablespoon of baking powder (aluminum-free)
- ½ a cup of unpasteurized honey or pure maple syrup
- 3 tablespoons of ground flaxseed in ½ a cup of water
- ⅛ of a teaspoon of ground nutmeg
- ½ a teaspoon of Himalayan salt
- 1 teaspoon of ground turmeric
- ⅛ of a teaspoon of ground cloves
- 1 teaspoon of ground ginger
- 1 tablespoon of ground cinnamon
The oven should be preheated to 400 F. Take a skewer and several holes in the skin of the potato. Put it on a baking tray. Cook the potato for 1 hour.
Leave it to cool down and then cut it in a half. Remove the inside of the potato. Put it in a larger bowl where you’ll add the maple syrup, olive oil, coconut milk and flaxseed. Combine all of the dry ingredients into another bowl. After that, combine everything together.
Take a muffin tray and apply some coconut oil on it to grease it. Put the prepared batter evenly. You should cook the muffins for 30 minutes.
